Chapter information in MKV files

I am a recent member and would first like to say a big thank you to this site - the content is simply put just phenomenal!

One thing I have noticed is that the files that are ending with 720pier.mkv do not have any chapter information. On the other hand, the other files have a single chapter that spans the entire duration of the video file.

Is it possible to remove the chapter information even from the files that do not end with 720pier.mkv? A single chapter is not particularly useful and in my case, an additional problem is that Emby does not create chapters if there are any in the original file. This means that for these files, chapter skip ends up disabled as there is only one chapter.
